I use a wide gap hook from VMC or Owner or EWG hooks from Gamakatsu or Trokar. Size ranges from 3/0 to 5/0, depending on the length of the plastic. One of the first things to do with these hooks is to flatten the barb. Makes for real easy hook removal. Have never liked the action with keel weighted hooks. I use a 20 to 30 pound test leader. The rig is simple and weedless. Slide a bullet sinker onto the leader, tie on the hook and slide the sinker down to an 1/8th inch in front of the knot and crimp it in place. Using this rig you can go with almost any weight. Use a side sweep instead of an up and down jigging motion. With good hooks the only hook set you need is to let the fish take it and set it herself. Forget the "OH SON" rod bustin,' lip rippin' hook set that you see on tv.
